Peanut Butter Cookies
Ingredients
1 cup / 240g smooth natural peanut butter
1 large high-welfare egg
1 tsp vanilla extract
½ tsp baking powder
1 tbsp low-carb sweetener of your choice (e.g. Stevia)
Directions
Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
In a bowl, mix together the peanut butter, sweetener, egg, vanilla extract and baking powder. Stir to fully combine and move the mixture to the fridge.
After it has been chilled for at least 10 minutes, use a tablespoon to scoop small portions of the mixture onto the baking tray. Press lightly with the back of the spoon to flatten the portions and shape them into cookies.
Bake for 8-9 minutes, until they turn golden-brown. Transfer to a wire rack to cool before serving.
