Directions
In a large bowl, mix together all the wet ingredients, plus the chopped coriander and seasoning.
Tip in the prawns and stir until thoroughly combined.
Arrange the baby gem leaves on a serving platter so they look like little lettuce bowls.
Spoon in the avocado, followed by the prawn and sauce mixture.
Sprinkle with smoked paprika, and garnish with lemon wedges and remaining coriander sprigs.
