Peel and carefully halve the eggs with a sharp knife. Scoop out the egg yolks and set them aside.
Arrange the egg white halves flat-side up on a serving platter.
In a separate bowl, combine the egg yolks, avocado, garlic, lime juice, chopped coriander, and seasoning. Press down with a fork until a smooth mixture forms.
Using a spoon or piping bag, fill each half-egg with the avocado mixture.
Sprinkle with smoked paprika and serve on a bed of whole coriander sprigs.
