Simple Miso Soup
Ingredients
4 cups / 1l dashi stock (or vegetable stock)
3 tbsp / 45g of red miso paste
½ cup / 130g tofu, diced
2 spring onions, thinly sliced diagonally
Dried seaweed, to serve (optional)
Directions
Warm the dashi or vegetable stock in a deep pot over a medium heat but don’t let it boil.
Whisk in the miso paste until fully dissolved.
Add the diced tofu and spring onions and simmer gently for 3-4 minutes.
Serve hot, with a slice of dried seaweed if you like.
