Banana oatmeal pancakes
These fluffy, naturally sweet pancakes are the kind of morning hug that gets even the sleepiest little ones excited to come to the table.
Ingredients
2 ripe bananas
2 eggs
1 cup oatmeal / porridge oats
¼ tsp ground cinnamon
Pinch of salt
Drizzle of honey
Fresh fruit of your choice
Directions
Mash the bananas.
Add the eggs, oats and a pinch of salt and cinnamon.
Whisk everything together until smooth (or use a blender, if preferred).
Melt a little butter or dairy alternative in a nonstick pan and cook the pancakes for about 2 minutes, until set. Make sure the heat isn't too high so they don't burn.
Flip and cook for another 30 seconds on the other side.
Serve with some honey and fresh fruit.
