Cook the pasta according to package directions. Drain and set aside.
Heat olive oil in a large pan over medium heat. Add the onion and garlic, sauté for 2–3 minutes until soft.
Add the mince and cook until browned, breaking it up with a wooden spoon (about 5 minutes).
Stir in the grated carrot, zucchini, and bell pepper. Cook for 3–4 minutes - the veggies will melt into the sauce and become invisible!
Add the crushed tomatoes, tomato paste, oregano, and basil. Stir well.
Simmer on low heat for 15–20 minutes, stirring occasionally. The sauce will thicken and the flavours will develop.
Optional: Stir in the spinach in the last 2 minutes - it wilts and disappears into the sauce.
Season with a pinch of salt and pepper to taste.
Toss the sauce with the cooked pasta and serve!
