Peanut butter energy balls
Little hands love rolling these no-bake bites, and little mouths love eating them - a snack that feels like sneaking a sweet from the cookie jar.
Ingredients
2 cups peanut butter
1 cup oatmeal / porridge oats
½ cup sugar-free chocolate chips
2 tbsp honey
2 tbsp ground flax seed
Directions
Stir all ingredients together in a large mixing bowl until thoroughly combined.
Add a little more peanut butter if the mixture is too dry, or oats if it's too wet.
Cover the mixing bowl and chill in the refrigerator for 1–2 hours, or until the mixture has become firm and malleable.
Roll mixture into 1-inch balls and store in an airtight container.
Tips for picky eaters
Let kids roll the balls themselves - they're more likely to eat what they helped make
Use fun sprinkles or desiccated coconut for rolling to make them look like treats
Call them "cookie dough bites" - the name matters!
If your child dislikes visible flax seeds, use ground flax so it blends in completely
