Low-Carb Bread
If you’re craving a slice of toast or a proper sandwich, this homemade bread will hit the spot.
Ingredients
8 medium high-welfare eggs
1/2 cup / 113g butter, plus extra for greasing
2 tbsp extra virgin olive oil
2 cups / 250g almond flour, finely ground
2 tsp baking powder
½ teaspoon stevia or alternative sweetener
½ teaspoon salt
Directions
Preheat the oven to 195C/175C fan/gas 6.
Grease a loaf tin lightly with butter.
Melt 1/2 cup of butter and leave to fully cool.
Crack all the eggs into a bowl and whisk for 2-3 minutes until creamy. Drizzle in the melted butter and olive oil and stir thoroughly until fully combined.
In a separate bowl, mix together the almond flour, baking powder, stevia and salt.
Add the dry ingredients to the wet ingredients slowly, folding them together until the mixture forms a batter.
Pour the batter into the loaf tin and place it in the centre of the oven.
Remove after 35 minutes to check for doneness: pierce the centre with a skewer or toothpick. If it comes back out with some batter attached, it needs a little more time. If it slides cleanly out and the top has turned golden, it’s ready to go!
